Strawberry Champagne Cupcakes


1 ½ cup cake flour

1 jar Gina's Gourmet Strawberry Spread

1 ½ tsp. baking powder

¼ tsp. salt

½ cup butter, softened

1 cup sugar

½ tsp. Vanilla extract

3 egg whites

1 cup champagne


3 cups powdered sugar

1 cup butter, softened

4 tbsp. champagne


Preheat oven to 350 degrees. Line muffin tin with paper liners. In a small bowl, combine flour, baking powder, and salt. Whisk the egg whites until peaks form and set aside. Cream together butter and sugar. Add the vanilla followed by dry ingredients and champagne. Fold in egg whites. Divide dough between paper liners. Bake for 15 to 18 minutes or until toothpick comes out clean. Using a teaspoon, hollow out center of cupcake and add strawberry spread. Make frosting (see below) and frost cupcakes.

Frosting: Whisk the butter with an electric mixer until light and fluffy. Slowly add the powdered sugar followed by the champagne. Whisk until fluffy.
