Pumpkin Cobbler


2 jars Gina’s Gourmet Pumpkin Spread, 9oz

1 can evaporated milk, 10oz

1 cup brown sugar

3 eggs

1 box yellow cake mix

1 cup (2 sticks) melted butter

1 cup graham cracker crumbs

½ cup chopped pecans (optional)


Preheat oven to 350 degrees. Spray 9x13 baking dish with cooking spray. In a large bowl, combine pumpkin, evaporated milk, sugar, and eggs. Whisk together. Pour mixture into prepared dish. Sprinkle box of cake mix on top of mixture, followed by graham cracker crumbs and nuts. Pour the melted butter evenly on top. Bake for 45 to 50 minutes until center is set. Let cool for 15 minutes. Best served warm with a scoop of ice cream or topped with whipped cream.
