Apple Mini Pecan Pies


1 refrigerated pie crust, 14oz

1 egg

½ cup light corn syrup

3 tbsp. Gina’s Gourmet Apple Spread

2 tbsp. butter, melted

½ tsp. vanilla

¼ cup sugar

¼ cup coarsely chopped pecans


Preheat oven 400 degrees. Unroll pie crust on lightly floured cutting board; cut into 12 (3 ½ inch) rounds with biscuit cutter, rerolling scraps as necessary. Press pastry rounds gently onto bottoms and up sides of 12 muffin pan cups sprayed with cooking spray. Whisk egg with corn syrup, apple spread, butter and vanilla. Stir in sugar and nuts. Spoon evenly into crusts, adding about 1 tablespoon of mixture to each one. Bake 15 to 17 minutes or until filling is hot and bubbly and tops of pies are lightly browned. Cool for 15 minutes. Run knife around edges to loosen from pan. Serve topped with cool whip or ice cream or by themselves.
